- 4 large sweet potatoes, peeled and sliced into thick rounds
- 1/2 cup unsalted butter
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup water
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla extract

Instructions
- Peel sweet potatoes and slice into even 1/2-inch rounds.
- In a large skillet or pot, melt butter over medium heat.
- Stir in brown sugar, granulated sugar, water, cinnamon, nutmeg, and salt.
- Bring mixture to a gentle simmer until sugar dissolves and sauce is smooth.
- Add sweet potatoes in an even layer.
- Cover and cook on low heat for 25β35 minutes, stirring gently occasionally, until potatoes are fork-tender.
- Remove lid and simmer uncovered for 5β10 minutes to thicken glaze.
- Stir in vanilla extract.
- Serve warm, spooning extra syrup over the top.
