  • 4 large sweet potatoes, peeled and sliced into thick rounds
  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup water
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract

Instructions

  1. Peel sweet potatoes and slice into even 1/2-inch rounds.
  2. In a large skillet or pot, melt butter over medium heat.
  3. Stir in brown sugar, granulated sugar, water, cinnamon, nutmeg, and salt.
  4. Bring mixture to a gentle simmer until sugar dissolves and sauce is smooth.
  5. Add sweet potatoes in an even layer.
  6. Cover and cook on low heat for 25–35 minutes, stirring gently occasionally, until potatoes are fork-tender.
  7. Remove lid and simmer uncovered for 5–10 minutes to thicken glaze.
  8. Stir in vanilla extract.
  9. Serve warm, spooning extra syrup over the top.
