Filling:
- 1 tbsp olive oil
- 1 lb ground beef or turkey (you love high-protein!)
- ½ cup onion, finely diced
- 2 garlic cloves, minced
Taco seasoning (low-sodium, no sugar!):
- 1½ tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp oregano
- Pinch of cayenne (optional—you love spicy!)
- Salt & black pepper to taste
Binding & coating:
- 4 oz (½ block) full-fat cream cheese, softened (you love cream cheese!)
- 1 cup shredded reduced-sodium cheddar cheese
- 1 cup crushed gluten-free tortilla chips (or pork rinds for low-carb—you love this!)
Sugar-free ranch drizzle:
- ¼ cup plain Greek yogurt or sour cream (you love high-protein!)
- 1 tbsp mayonnaise or avocado oil mayo
- ½ tsp dried dill
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tbsp fresh lemon juice or apple cider vinegar
- 1–2 tbsp water (to thin)
- Salt & pepper to taste
Instructions
Heat oil in skillet over medium heat. Add onion; cook 3–4 min until soft. Add garlic; cook 30 sec. Add ground meat; cook until browned. Drain excess fat.
Stir in all taco seasoning ingredients; cook 1 min. Remove from heat; stir in cream cheese and cheddar until melted and smooth. Cool 5–10 min (until easy to handle).
Roll into 1″ balls (about 24). Roll each in crushed tortilla chips or pork rinds to coat. Place on parchment-lined tray.
Whisk all ranch ingredients until smooth. Add water as needed for drizzling consistency.
Drizzle bites with ranch or serve on the side for dipping.
