Ingredients

(Makes 24 bites)

Filling:

  • 1 tbsp olive oil
  • 1 lb ground beef or turkey (you love high-protein!)
  • ½ cup onion, finely diced
  • 2 garlic cloves, minced

Taco seasoning (low-sodium, no sugar!):

  • 1½ tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp oregano
  • Pinch of cayenne (optional—you love spicy!)
  • Salt & black pepper to taste

Binding & coating:

  • 4 oz (½ block) full-fat cream cheese, softened (you love cream cheese!)
  • 1 cup shredded reduced-sodium cheddar cheese
  • 1 cup crushed gluten-free tortilla chips (or pork rinds for low-carb—you love this!)

Sugar-free ranch drizzle:

  • ¼ cup plain Greek yogurt or sour cream (you love high-protein!)
  • 1 tbsp mayonnaise or avocado oil mayo
  • ½ tsp dried dill
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp fresh lemon juice or apple cider vinegar
  • 12 tbsp water (to thin)
  • Salt & pepper to taste

Instructions

1. Cook filling:
Heat oil in skillet over medium heat. Add onion; cook 3–4 min until soft. Add garlic; cook 30 sec. Add ground meat; cook until browned. Drain excess fat.
2. Season & mix:
Stir in all taco seasoning ingredients; cook 1 min. Remove from heat; stir in cream cheese and cheddar until melted and smooth. Cool 5–10 min (until easy to handle).
3. Shape bites:
Roll into 1″ balls (about 24). Roll each in crushed tortilla chips or pork rinds to coat. Place on parchment-lined tray.
4. Make ranch:
Whisk all ranch ingredients until smooth. Add water as needed for drizzling consistency.
5. Serve:
Drizzle bites with ranch or serve on the side for dipping.
