- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup red bell pepper, finely diced
- 1/2 cup yellow bell pepper, finely diced
- 4 oz cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Cut a pocket into the side of each chicken breast without slicing all the way through.
- In a bowl, combine spinach, bell peppers, cream cheese, mozzarella, and garlic.
- Stuff each chicken breast with the spinach mixture and secure with toothpicks if needed.
- Rub the outside of the chicken with olive oil.
- Season with paprika, Italian seasoning, salt, and pepper.
- Place chicken in a lightly greased baking dish.
- Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Let rest for 5 minutes before serving.
- Remove toothpicks and enjoy warm.
