Vibrant Cheesy Spinach & Pepper-Stuffed Chicken: A Colorful, Flavor-Packed Dinner

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup red bell pepper, finely diced
  • 1/2 cup yellow bell pepper, finely diced
  • 4 oz cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into the side of each chicken breast without slicing all the way through.
  3. In a bowl, combine spinach, bell peppers, cream cheese, mozzarella, and garlic.
  4. Stuff each chicken breast with the spinach mixture and secure with toothpicks if needed.
  5. Rub the outside of the chicken with olive oil.
  6. Season with paprika, Italian seasoning, salt, and pepper.
  7. Place chicken in a lightly greased baking dish.
  8. Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  9. Let rest for 5 minutes before serving.
  10. Remove toothpicks and enjoy warm.
