Ingredients
• 8 oz whole-wheat or chickpea pasta
• 1 lb lean chicken breast, diced
• 1 cup frozen peas and carrots, thawed
• 1 small onion, diced
• 2 cloves garlic, minced
• 2 cups low-sodium chicken broth
• ½ cup plain Greek yogurt
• 1 tbsp whole wheat flour or cornstarch
• 1 tsp dried thyme or poultry seasoning
• ½ tsp garlic powder, salt & pepper
• 2 tbsp fresh parsley, chopped
• Optional: ¼ cup grated parmesan or nutritional yeast
Instructions
• Cook pasta according to package directions; drain and set aside.
• In a large skillet, sauté chicken, onion, and garlic over medium heat 5-6 mins until chicken is cooked through.
• Sprinkle flour over chicken mixture; stir 1 minute to coat.
• Gradually pour in chicken broth and thyme; simmer 3-4 mins until slightly thickened.
• Reduce heat to low; whisk in Greek yogurt until smooth and creamy.
• Stir in cooked pasta, peas, and carrots; warm through 2 mins. Garnish with parsley and optional parmesan before serving!
