For the Pumpkin Cake:

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp salt
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup vegetable oil (or melted butter)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk

Creamy Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2–3 tbsp milk or cream (as needed for texture)

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9Γ—13-inch baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  3. In a separate large bowl, mix pumpkin puree, brown sugar, granulated sugar, oil, eggs, and vanilla until smooth.
  4. Add dry ingredients to wet ingredients, alternating with milk, mixing until just combined.
  5. Pour batter into the prepared pan and spread evenly.
  6. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow cake to cool completely.
  8. Beat cream cheese, powdered sugar, vanilla, and milk until smooth and fluffy.
  9. Spread frosting over cooled cake.
  10. Slice and serve.
