  • 12 oz whole wheat cheese ravioli
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup low-sodium tomato sauce
  • ½ cup unsweetened almond milk
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • Salt, to taste
  • 2 tbsp fresh basil, chopped

Instructions

  1. Cook ravioli according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sauté onion for 3–4 minutes until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in cherry tomatoes and cook until slightly softened.
  6. Add tomato sauce, almond milk, Italian seasoning, salt, and pepper; simmer for 5 minutes.
  7. Mix in spinach until wilted.
  8. Gently fold in cooked ravioli and Parmesan cheese.
  9. Simmer for 2–3 minutes until heated through.
  10. Garnish with fresh basil and serve warm.
