- 12 oz whole wheat cheese ravioli
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 cup low-sodium tomato sauce
- ½ cup unsweetened almond milk
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp black pepper
- Salt, to taste
- 2 tbsp fresh basil, chopped
Instructions
- Cook ravioli according to package instructions; drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Sauté onion for 3–4 minutes until softened.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in cherry tomatoes and cook until slightly softened.
- Add tomato sauce, almond milk, Italian seasoning, salt, and pepper; simmer for 5 minutes.
- Mix in spinach until wilted.
- Gently fold in cooked ravioli and Parmesan cheese.
- Simmer for 2–3 minutes until heated through.
- Garnish with fresh basil and serve warm.
