  • 1/2 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 1/2 cup Greek yogurt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/4 tsp cloves
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together pumpkin puree, eggs, maple syrup, coconut oil, Greek yogurt, and vanilla extract.
  3. In a separate bowl, combine flour, cinnamon, nutmeg, ginger, cloves, baking soda, baking powder, and salt.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
  8. Cool completely before slicing and serving.
