- 1 3/4 cups all-purpose flour
- 1 cup pumpkin puree
- 2 large eggs
- 1/2 cup maple syrup
- 1/3 cup coconut oil, melted
- 1/2 cup Greek yogurt
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/4 tsp cloves
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together pumpkin puree, eggs, maple syrup, coconut oil, Greek yogurt, and vanilla extract.
- In a separate bowl, combine flour, cinnamon, nutmeg, ginger, cloves, baking soda, baking powder, and salt.
- Gradually stir the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
- Cool completely before slicing and serving.
