- 1 whole wheat pizza crust (12-inch)
- 1 cup cooked chicken breast, shredded
- ½ cup pumpkin puree
- 2 tbsp plain Greek yogurt
- 1 clove garlic, minced
- 1 tsp Italian seasoning
- ½ tsp paprika
- 1 cup shredded part-skim mozzarella cheese
- ¼ cup grated Parmesan cheese
- ¼ small red onion, thinly sliced
- 1 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- Salt and black pepper, to taste
Instructions
- Preheat oven to 425°F (220°C).
- In a small bowl, combine pumpkin puree, Greek yogurt, garlic, Italian seasoning, paprika, salt, and pepper.
- Spread the pumpkin mixture evenly over the pizza crust.
- Top with shredded chicken, red onion, mozzarella, and Parmesan cheese.
- Drizzle lightly with olive oil.
- Bake for 12–15 minutes, or until the cheese is melted and bubbly and the crust is golden.
- Remove from the oven and sprinkle with fresh parsley.
- Slice and serve warm.
