Zesty Chicken Pumpkin Pizza: A Flavor-Packed Fall Twist on Homemade Pizza

  • 1 whole wheat pizza crust (12-inch)
  • 1 cup cooked chicken breast, shredded
  • ½ cup pumpkin puree
  • 2 tbsp plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • 1 cup shredded part-skim mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • ¼ small red onion, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a small bowl, combine pumpkin puree, Greek yogurt, garlic, Italian seasoning, paprika, salt, and pepper.
  3. Spread the pumpkin mixture evenly over the pizza crust.
  4. Top with shredded chicken, red onion, mozzarella, and Parmesan cheese.
  5. Drizzle lightly with olive oil.
  6. Bake for 12–15 minutes, or until the cheese is melted and bubbly and the crust is golden.
  7. Remove from the oven and sprinkle with fresh parsley.
  8. Slice and serve warm.
