- 1 tbsp olive oil
- ½ lb lean ground beef or ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes with green chilies
- ½ cup black beans, rinsed and drained
- ½ cup corn kernels
- 4 oz light cream cheese, softened
- 1 cup shredded reduced-fat cheddar cheese
- ½ cup plain Greek yogurt
- ¼ cup unsweetened almond milk
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp ground cumin
- Salt and black pepper, to taste
- 2 tbsp chopped fresh cilantro
Instructions
- Heat olive oil in a large skillet over medium heat.
- Cook the ground beef or turkey until browned, then drain any excess fat.
- Add the onion and cook for 3–4 minutes until softened.
- Stir in the garlic and cook for 30 seconds.
- Add the diced tomatoes, black beans, corn, chili powder, paprika, cumin, salt, and pepper.
- Stir in the cream cheese, cheddar cheese, Greek yogurt, and almond milk until melted and smooth.
- Simmer for 3–5 minutes, stirring occasionally.
- Garnish with fresh cilantro and serve warm with baked tortilla chips or fresh vegetable sticks.
