Ingredients

  • 1 tbsp olive oil
  • ½ lb lean ground beef or ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes with green chilies
  • ½ cup black beans, rinsed and drained
  • ½ cup corn kernels
  • 4 oz light cream cheese, softened
  • 1 cup shredded reduced-fat cheddar cheese
  • ½ cup plain Greek yogurt
  • ¼ cup unsweetened almond milk
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Cook the ground beef or turkey until browned, then drain any excess fat.
  3. Add the onion and cook for 3–4 minutes until softened.
  4. Stir in the garlic and cook for 30 seconds.
  5. Add the diced tomatoes, black beans, corn, chili powder, paprika, cumin, salt, and pepper.
  6. Stir in the cream cheese, cheddar cheese, Greek yogurt, and almond milk until melted and smooth.
  7. Simmer for 3–5 minutes, stirring occasionally.
  8. Garnish with fresh cilantro and serve warm with baked tortilla chips or fresh vegetable sticks.
