Ingredients
• 2 medium zucchini, grated and squeezed dry
• ½ cup almond flour or chickpea flour
• 1 large egg or flax egg
• ¼ cup plain Greek yogurt
• 3 cloves garlic, minced
• 2 tbsp fresh parsley, chopped
• 1 tbsp fresh chives, chopped
• ½ tsp baking powder
• ¼ tsp garlic powder, salt & pepper
• Olive oil spray for baking
Instructions
• Grate zucchini and squeeze out excess moisture using a clean kitchen towel or cheesecloth.
• In a bowl, combine zucchini, almond flour, egg, Greek yogurt, garlic, herbs, baking powder, and seasonings; mix well.
• Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
• Drop tablespoon-sized portions onto the sheet, flattening gently into small bites.
• Lightly spray tops with olive oil for golden crispness.
• Bake 12-15 mins, flipping halfway, until golden brown and crispy on edges.
• Serve warm with Greek yogurt dip or marinara for a wholesome, garlicky snack!
