- 2 ripe bananas, sliced
- 1½ cups fresh strawberries, sliced
- 1 cup plain Greek yogurt
- ½ cup light cream cheese, softened
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- ½ cup crushed whole grain vanilla wafers
- 2 tbsp chopped walnuts (optional)
- Fresh mint leaves, for garnish (optional)
Instructions
- In a medium bowl, beat the cream cheese until smooth.
- Add the Greek yogurt, maple syrup, and vanilla extract, then mix until creamy.
- In serving glasses or bowls, add a layer of crushed vanilla wafers.
- Spoon a layer of the creamy pudding mixture over the wafers.
- Add a layer of sliced bananas and strawberries.
- Repeat the layers until the glasses are full.
- Top with the remaining strawberries, banana slices, and chopped walnuts if desired.
- Chill for 30 minutes before serving.
- Garnish with fresh mint leaves and enjoy.
