Lime glaze:

  • 1 cup powdered sweetener (powdered erythritol or monk fruit blend)
  • 23 tbsp fresh lime juice
  • ½ tsp lime zest
  • Optional: 1–2 drops natural green food coloring

Instructions

1. Prep & mix batter:

  1. Preheat oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan (or use nonstick spray).
  2. Whisk flour, baking powder, baking soda, and salt.
  3. Beat butter and sweetener until light (~3 min). Add eggs one at a time, then vanilla and lime zest.
  4. Alternately add dry ingredients and buttermilk, beginning and ending with flour. Mix in lime juice last.

2. Bake:

Pour into pan; smooth top. Bake 35–40 minutes until toothpick comes out clean. Cool in pan 15 minutes; invert onto rack.

3. Glaze & serve:

Whisk glaze ingredients until smooth. Drizzle over cooled cake. Let set 15 minutes before slicing.
