Hawaiian Pineapple Cake: Moist, Tropical, and Bursting with Sweet Island Flavor

For the Cake:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup sugar
  • 1/3 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple (with juice)
  • 1/2 cup milk

For the Topping:

 

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup whipped topping
  • 1/2 cup crushed pineapple, drained

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, sugar, coconut oil, vanilla, crushed pineapple, and milk.
  4. Combine wet and dry ingredients until just mixed.
  5. Pour batter into prepared baking dish and smooth evenly.
  6. Bake for 30–35 minutes, or until a toothpick comes out clean.
  7. Let cake cool completely.
  8. Beat cream cheese, powdered sugar, and vanilla until smooth.
  9. Fold in whipped topping and crushed pineapple.
  10. Spread topping evenly over cooled cake.
  11. Chill for 1 hour before serving.
