For the Cake:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup sugar
- 1/3 cup coconut oil, melted
- 1 tsp vanilla extract
- 1 cup crushed pineapple (with juice)
- 1/2 cup milk
For the Topping:
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup whipped topping
- 1/2 cup crushed pineapple, drained
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, mix eggs, sugar, coconut oil, vanilla, crushed pineapple, and milk.
- Combine wet and dry ingredients until just mixed.
- Pour batter into prepared baking dish and smooth evenly.
- Bake for 30–35 minutes, or until a toothpick comes out clean.
- Let cake cool completely.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in whipped topping and crushed pineapple.
- Spread topping evenly over cooled cake.
- Chill for 1 hour before serving.
