For the Base:
- 1½ cups rolled oats
- 1 cup natural peanut butter
- ¼ cup maple syrup
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- ¼ tsp sea salt
Chocolate Topping:
- ¾ cup dark chocolate chips
- 1 tsp coconut oil
Instructions
- Line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix together the rolled oats, peanut butter, maple syrup, melted coconut oil, vanilla extract, and sea salt until well combined.
- Press the mixture firmly into the prepared pan to form an even layer.
- Melt the dark chocolate chips with the coconut oil until smooth.
- Pour the melted chocolate over the peanut butter layer and spread evenly.
- Refrigerate for at least 2 hours, or until firm.
- Lift the bars from the pan using the parchment paper.
- Slice into 16 bars and serve chilled.
