For the Base:

  • 1½ cups rolled oats
  • 1 cup natural peanut butter
  • ¼ cup maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • ¼ tsp sea salt

Chocolate Topping:

  • ¾ cup dark chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix together the rolled oats, peanut butter, maple syrup, melted coconut oil, vanilla extract, and sea salt until well combined.
  3. Press the mixture firmly into the prepared pan to form an even layer.
  4. Melt the dark chocolate chips with the coconut oil until smooth.
  5. Pour the melted chocolate over the peanut butter layer and spread evenly.
  6. Refrigerate for at least 2 hours, or until firm.
  7. Lift the bars from the pan using the parchment paper.
  8. Slice into 16 bars and serve chilled.
