- 1 loaf day-old bread, cubed
- 1 cup pumpkin puree
- 4 large eggs
- 1 1/2 cups milk
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1/4 tsp nutmeg
- 1/4 tsp salt
Optional Topping:
- 2 tbsp brown sugar
- 1 tbsp melted butter
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a baking dish.
- Place cubed bread evenly in the dish.
- In a bowl, whisk together pumpkin puree, eggs, milk, maple syrup, vanilla, cinnamon, pumpkin pie spice, nutmeg, and salt.
- Pour mixture evenly over bread, pressing lightly to soak.
- Let sit for 10–15 minutes to absorb liquid.
- Mix topping ingredients and sprinkle over the casserole if using.
- Bake for 40–45 minutes until golden and set.
- Let cool slightly before serving warm.
