  • 1 loaf day-old bread, cubed
  • 1 cup pumpkin puree
  • 4 large eggs
  • 1 1/2 cups milk
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Optional Topping:

  • 2 tbsp brown sugar
  • 1 tbsp melted butter
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Place cubed bread evenly in the dish.
  3. In a bowl, whisk together pumpkin puree, eggs, milk, maple syrup, vanilla, cinnamon, pumpkin pie spice, nutmeg, and salt.
  4. Pour mixture evenly over bread, pressing lightly to soak.
  5. Let sit for 10–15 minutes to absorb liquid.
  6. Mix topping ingredients and sprinkle over the casserole if using.
  7. Bake for 40–45 minutes until golden and set.
  8. Let cool slightly before serving warm.
