- 1 cup pumpkin puree (well drained)
- 2 cups white chocolate chips
- 1/2 cup sweetened condensed milk
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- Pinch of salt
Instructions
- Line an 8×8-inch pan with parchment paper.
- In a saucepan over low heat, melt white chocolate chips with sweetened condensed milk and coconut oil.
- Stir continuously until smooth and fully melted.
- Mix in pumpkin puree, vanilla, pumpkin pie spice, cinnamon, and salt.
- Continue stirring until mixture is thick and creamy.
- Pour into prepared pan and smooth the top evenly.
- Chill in the refrigerator for at least 3–4 hours, until firm.
- Cut into squares and serve cold.
