  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

For the Crumb Topping:

  • 3/4 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 cup unsalted butter, melted
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a large bowl, whisk together pumpkin puree, eggs, maple syrup, coconut oil, Greek yogurt, and vanilla.
  3. In another bowl, combine flour, cinnamon, nutmeg, ginger, baking powder, baking soda, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. In a separate bowl, combine flour, brown sugar, cinnamon, melted butter, and salt until crumbly.
  7. Sprinkle the crumb topping evenly over the batter.
  8. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool for 15 minutes before slicing and serving.
