For the Base:
- 1 1/2 cups whole wheat flour
- 1/2 cup maple syrup
- 1 cup unsweetened almond milk
- 1/3 cup coconut oil, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
For the Cinnamon Sugar Topping:
- 1/2 cup coconut sugar
- 2 tsp cinnamon
- 2 tbsp coconut oil, melted
Instructions
- Preheat oven to 350°F (175°C) and grease a baking dish.
- In a bowl, whisk eggs, maple syrup, coconut oil, almond milk, and vanilla.
- Stir in flour, baking powder, and salt until smooth batter forms.
- Pour batter into prepared baking dish.
- In a small bowl, mix coconut sugar and cinnamon.
- Sprinkle cinnamon sugar evenly over the batter.
- Drizzle melted coconut oil over the top.
- Bake for 30–35 minutes, until golden and slightly crisp on top but soft underneath.
- Let cool for 10 minutes before serving warm.
