For the Base:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup maple syrup
  • 1 cup unsweetened almond milk
  • 1/3 cup coconut oil, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt

For the Cinnamon Sugar Topping:

  • 1/2 cup coconut sugar
  • 2 tsp cinnamon
  • 2 tbsp coconut oil, melted

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, whisk eggs, maple syrup, coconut oil, almond milk, and vanilla.
  3. Stir in flour, baking powder, and salt until smooth batter forms.
  4. Pour batter into prepared baking dish.
  5. In a small bowl, mix coconut sugar and cinnamon.
  6. Sprinkle cinnamon sugar evenly over the batter.
  7. Drizzle melted coconut oil over the top.
  8. Bake for 30–35 minutes, until golden and slightly crisp on top but soft underneath.
  9. Let cool for 10 minutes before serving warm.
